Torrijas Recipe

Method:

  1. In a suitable pan, combine the milk, cream, orange peel and vanilla pod (or flavoirung). Bring to boil.

  2. After boiling, remove from the heat, add the white chocolate and leave infusing for 20 minutes with a lid on.

  3. Format the bread in the desired shape, ideally thick enough to avoid it to break during the soaking and cooking process.

  4. Once infusion is ready, remove the orange peel and stir the mix to make sure white chocolate in completely incorporated to the milk and cream.

  5. On a plate or rack, start topping the bread with spoons of the cream mix to soak the bread completely. Repeat this process as many times needed until the bread is soaked to the core.

Caramelised Torrija::

  1. In a pan, put the sugar and water. Bring it to a caramel stage and then add the butter to make the toffee.

  2. Put on a low heat and caramelize the soaked brioche (or bread) onto the toffee. DO NOT caramelize for too long time otherwise your toffee will become very thick and hard.

  3. Serve it warm on a plate with some ice-cream.

Fried Torrija::

  1. Get ready a mix of sugar and cinnamon on a plate for the coating.

  2. Beat some egg in a bowl and coat the soaked brioche with it.

  3. In a pan with enough hot vegetable oil, deep fry the brioche (coated with egg) until golden colour.

  4. Remove from the oil and deep into the mix of sugar and cinnamon.

  5. Serve it warm on a plate with some ice-cream.

Torrijas

Ingredients:

  • 4 Slices Brioche Loaf (bought in)
  • 200 gms Whole Milk
  • 100 gms Double Cream
  • ¼ Orange peel
  • ½ Vanilla Pod (Or vanilla flavouing)
  • 100 gms White Chocolate
  • Vanilla Icecream (Optional)

For Caramelised one::

  • 50 gms White Sugar
  • 20 gms Water
  • 20 gms Unsalted Butter

For Fried one:

  • 1 Whole Egg
  • Enough Veg Oil to fry
  • Sugar and Cinnamon
