Pinchitos Roasted Chicken Recipe

Method:

  1. Ground all the spices together and reserve.

  2. Chop the onions, garlic and parsley.

  3. Get the chicken ready in the way you like to roast it. (Follow video instructions suggestion)

  4. Marinade the chicken with the vegetables and spices for 8 houres.

  5. Place on a roasting tray and cook in the preheated oven for 45 mins at 200C.

Note: If the chicken is whole (not as in the video) cooking time may vary.

Ingredients:

  • 1Whole Chicken
  • 1 White Onion Chopped
  • 4 Garlic Cloves Chopped
  • 10 gms Fresh Parsley Chopped
  • 50 ml Extra Virgin Olive Oil
  • 60 gms Salt
  • 5 gms Ground Coriander
  • 5 gms Ground Cumin
  • 5 gms Ground Black Pepper
  • 2 gms Ground Anise Seeds
  • 4 Whole Cloves
  • 15 gms Garlic Powder
  • 4 gms Cayenne Powder
  • 10 gms Dried Oregano
  • 12 gms Turmeric Powder
